Won Ton Tacos

Ingredients
- 1 lb ground beef (substitute ground chicken or turkey as a healthier option)
- ½ yellow onion, finely chopped
- 1 tsp cooking oil
- 1 package McCormick Taco Seasoning
- ¾ cup water
- 1 package Nayso Won Ton Wraps (found in the produce aisle at most grocery stores. You can use either the round wraps or square wraps, but we have found the square wraps hold a little more filling)
- Non-stick spray
- 1 cup shredded cheddar or Mexican Blend cheese
Directions
Begin by preheating your oven to 400˚F. In a large skillet on the stove over medium-high heat, add the cooking oil and finely chopped onion. Sweat the onions for 2 or 3 minutes, and add the ground beef. As the beef is browning, spray your muffin tin with the non-stick spray and begin placing the won ton wraps over the holes. Once each hole is covered by a won ton wrap, gently push the won ton wrap down into the pan, creating a pocket for the meat filling. Once the meat is browned, drain our ground beef in a sieve and return the beef to the pan. Add the taco mix package along with the water. While the taco mix is simmering, set out favorite taco toppings- salsa, sour cream, shredded lettuce or coleslaw, guacamole. Missing guacamole? Try this quick, refreshing guacamole recipe. Once the table is set, turn back to the simmering beef. Turn the heat off, and gently spoon the ground beef into the won ton cups in the muffin tin. Top each ‘taco’ with a hefty pinch of grated cheese. Pop the muffin tin in the oven for 8 minutes, or until the cheese has melted and the edges of the won tons are beginning to brown. Once the won ton tacos are out of the oven, use either a spoon or fork to wiggle them out of the muffin tin- they should give without too much effort, and the little taco cups can be set on a serving plate for the table. Top with your favorite toppings.
*Note: This recipe can be doubled very easily, as a heavy appetizer you can make two trays of these delicious tacos. These keep easily in the refrigerator as a grab and go snack or lunch left overs.
