Fluffy Pancakes

Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 4 tsp baking powder
- ½ tsp salt
- ¼ tsp baking soda
- 1 ¾ cups milk
- ¼ cup butter, melted
- 2 tsp vanilla extract
- 1 large egg
Directions
First sift together your dry ingredients: the flour, sugar, baking powder, baking soda and salt in a large-sized mixing bowl.
In a separate bowl thoroughly mixed the milk, melted butter, vanilla and egg. Then add the wet ingredients to the dry ingredients and whisk together everything together until the batter is smooth. The batter should have a thick and creamy in consistency.
Set the batter aside and allow to rest while heating up your pan or griddle. Adjust the heat to medium and lightly grease your griddle or pan. Pour ¼ cup of batter onto the pan and the batter will spread out gently in a round shape.
When bubbles begin to appear on the surface, flip the pancake with a spatula and cook until golden. Repeat with remaining batter.
*Note: For best results check the date on your baking soda and baking powder, outdated leavening agents don’t work as well.
