Mango Slaw

Ingredients
Slaw
- 3 cups green cabbage, thinly sliced
- 3 cups purple cabbage, thinly sliced
- 1 mango cut into ½-inch pieces
- 1 medium carrot, peeled and grated
- ½ redonionthinly sliced
- ¼ cup chopped cilantro
- 1-2 tbsp minced jalapeño pepper, optional
Dressing
- 3 tbsp fresh lime juice
- 2 tbsp extra-virgin olive oil
- 1 tsp honey
- ¼ tsp ground cumin
- ⅛ tsp ground coriander
- ⅛ tsp kosher salt
Directions
Chop the green and purple cabbage and mix them in a large salad bowl. Peel and grate the carrots, adding them to the cabbage. Next dice the mango and add it to the bowl. Slice the red onions and combine them, then chop the cilantro and add it to the mixture. Mince and add the jalapeño if using. Ina separate small bowl combine the dressing ingredients and whisk them together thoroughly. Pour in the dressing and toss everything gently to combine. Serve.
